We, at Fattoria Montagliari, are proud of the fine array of genuine products that we produce with all our personal attention and care!
Our own extra-virgin olive oil is cold-pressed. The temperature during pressing never rises above 26°C., resulting in a light, fragrant, flavorful oil with an extremely low level of acidity. Our aromatic infused oils, produces using or own extra-virgin olive oil and various fresh herbs, are the key that opens the door to any chef's imagination!
Our own Salsa di Mosto d'Uva Trebbiano (aged balsamic) is produced from white Trebbiano grapes according to traditional standards and aged for 20 and 28 years in small kegs of ever-decreasing size made of different woods – cherry, chestnut, ash, oak and acacia – each adding its own character and complexity to the sauce.
Our vinsanto is aged in over 500 kegs, called caratelli, and bottled in small lots to be sold directly to our customers. The vintages in our vinsanteria go back to 1970. At the end of each summer, in September, our malvasia grapes are harvested and hung to dry in special racks for three months. The raisins are then turned into wine and aged in caratelli for at least ten years before bottling. Our oldest bottled vinsanto is from 1871.
Our vinyards consist of several varieties, all native to the region: Sangiovese, Canaiolo, Malvasia bianca, Malvasia nera, Colorino, Ciliegiolo and Trebbiano.
